Granola bars

Yummy, make them the way you like it, granola bars!
A good starting point recipe which you can easily change to make it with only your favorite ingredients.

This is a good recipe for little ones to help with. Jaxon helping get the peanuts out of the shells (peanuts from Five Guys, because that’s all we had).

Here is the way I make mine:
Granola Bars
1 c. granola*
2 c. rice crispy cereal
1/2 c. almonds, slivered or chopped
1/2 c. peanuts, chopped
1/2 c. coconut
1/2 c. craisins
2/3 c. chocolate chips
1 T. chia seeds
4 T. butter or coconut oil
1/4 c. brown sugar
1/4 c. honey

Mix granola, rice crispy’s, almonds, peanuts, coconut, craisins, and chia seeds together in a large bowl. In a small sauce pan, melt butter and add brown sugar and honey. Simmer for 2 minutes. Pour the honey mixture over the granola mixture and stir until evenly coated. Add chocolate chips (wait a little longer if you don’t want them to melt, I like mine a little melted). Press firmly into a 9 x 12 pan that is lined with wax paper. Cut into 12 squares and place pan in the fridge for an hour or two. I like to wrap each bar in wax paper and place in a ziplock bag. I store them in the fridge until they are gone, which has never been very long!
You can use whatever ingredients you like best in your granola bars just make sure there is about 5-6 cups of dry items to go with the sticky honey/sugar part.

*I like fairly plain granola because if its too sweet the bars get too sweet for me (the honey mixture makes them sweet enough). Here is a good simple granola recipe that I love.
